This is the second time I’ve used my instant pot and I have to say I have gotten better with using it. Tonight I made Curry Chicken & Potatoes. I found this recipe on Pinterest and decided to make it.What you’ll need:
- Chicken breasts
- Heavy cream
- Almond milk
- Tomato paste
I started by turning on the pot to sauté and put butter in the pot along with a cinnamon stick, cumin, minced garlic, onions, ginger and bay leaves. I let that warm up and made sure to watch closely so the spices didn’t burn . I added some tomato paste and heavy cream mixed it together and sautéed until it was golden brown for 7 minutes. I added a bit of water so the spices didn’t stick and then turned the pot off. I hit sauté again to turn the pot back on and added the chicken along with a 1/2 cup of water. I closed the lid on and turned the valve to “sealing”. After that I let it pressure cook for 9 minutes. I did a quick release and turned the valve to “venting”, and hit cancel. I cut up two potatoes and tossed them in with Garam Marsala seasoning closed it back and pressure cooked it for 6 minutes. When it was finished I added curry powder and a bit more ginger then almond milk to make it sweet since the tomato paste made it a tad bitter. I didn’t have any cilantro to add on top but it was delicious !I bought all of these spices from Publix along with the potatoes. The total time for this meal was about 45 minutes, the food was juicy and all of the seasoning worked very well together. I made enough to have for dinner tomorrow night as well, I know I’ll make this dish again soon. I’m glad I bought this IP it’s saved so much time on cooking!
