Lately I’ve been wanting to transition to more of a plant based diet and eat more plant based meals. A few nights ago on Pinterest I came across a recipe for vegan tacos . These tacos contain sweet potatoes and avocado ( I added butternut squash on a whim ) and it was pretty tasty.
Making these were very easy and I had these ingredients already in the fridge. I cut up a sweet potato in small cubes while the butternut squash was pre cut. I tossed them in a pan and added some pepper, paprika, cumin, garlic powder and taco sauce. It took about 10-12 minutes for me to get the sweet potato and butternut squash to be soft . I added some mozzarella cheese next and avocado that I mashed up added a bit of almond milk and pepper then added that to top off as a garnish.
These kept me full and I enjoyed eating 5 of them without feeling sluggish as I usually do from eating regular meat tacos. Who would have though sweet potatoes and butternut squash would make a delicious taco ? This will be a go to dinner for taco Tuesday’s from now on.
